I’m sure I’m not the only mom out there that has a hard time getting her child to eat vegetables. My daughter is pretty adventurous for a two year old and will pretty much try anything we put in front of her. Fruit? She will eat it all. Vegetables? Not so much. She doesn’t even like potatoes. Unless it’s in French fry form.
I was determined to get my child to eat something green and so I created this recipe. I get all kinds of good things in this and she drinks it happily, none the wiser.
The tartness of the cherries provides a fresh, sweet taste to this smoothie. They also pretty much cover the flavor of the spinach. Which when you’re dealing with children that avoid vegetables like the plague, this is a good thing.
A few months back, I picked up some coconut water because it was all the rave. I got home, opened the can, took a giant swig and promptly spat it out. I was not a fan. Of course, being me, I bought four cans of the stuff instead of just trying one. Remember the quinoa story? Clearly, I have issues. So one morning, when I was trying to create this recipe, I remembered that I had it in the fridge and used it and guess what? It tasted great in the smoothie. My other three cans wouldn’t go to waste!
I add some flaxseed, fresh lime juice and honey to round out all the flavors and this smoothie is meal worthy. Is it weird that I watch my daughter suck this down and inside my head there is evil laughter going on? I love it that she has no idea how good this is for her!
